A quick guide on making Probiotic Banana Bread, by Sabinsa, using LactoSpore®, the shelf-stable probiotic that can withstand high heat, for all your cooking needs.
Ingredients
- 1/2 cup coconut oil
- 2 eggs
- 1 1/3 cup brown sugar
- 1/2 cup kefir
- 1 tsp vanilla
- 3/4 cup tapioca flour
- 1 1/4 cup brown rice flour
- 2 tsp baking powder
- 3 medium ripe bananas
- 1/2 cup chopped walnuts
- 1 pinch sea salt
- 2 tsp LactoSpore®
Instructions
- Do ahead: In a bowl, mix together flour, sea salt and kefir until evenly combined. Cover and place in a cool area (to ferment)
- Preheat oven 300 degrees
- In a bowl, combine coconut oil, sugar, eggs and vanilla extract. Whisk together
- ash bananas and add into mix - whisk again
- Mix in flour mixture
- Fold in walnuts
- Add in baking powder and lactospore. Mix until smooth
- Grease loaf pan and lightly dust with flour, pour in batter
- Bake for 1 hour and 10 minutes
- Allow to cool for 5 - 10 minutes before removing from pan
