A quick guide on making Probiotic Banana Bread, by Sabinsa, using LactoSpore®, the shelf-stable probiotic that can withstand high heat, for all your cooking needs.

Ingredients

  • 1/2 cup coconut oil
  • 2 eggs
  • 1 1/3 cup brown sugar
  • 1/2 cup kefir
  • 1 tsp vanilla
  • 3/4 cup tapioca flour
  • 1 1/4 cup brown rice flour
  • 2 tsp baking powder
  • 3 medium ripe bananas
  • 1/2 cup chopped walnuts
  • 1 pinch sea salt
  • 2 tsp LactoSpore®

Instructions

  1. Do ahead: In a bowl, mix together flour, sea salt and kefir until evenly combined. Cover and place in a cool area (to ferment)
  2. Preheat oven 300 degrees
  3. In a bowl, combine coconut oil, sugar, eggs and vanilla extract. Whisk together
  4. ash bananas and add into mix - whisk again
  5. Mix in flour mixture
  6. Fold in walnuts
  7. Add in baking powder and lactospore. Mix until smooth
  8. Grease loaf pan and lightly dust with flour, pour in batter
  9. Bake for 1 hour and 10 minutes
  10. Allow to cool for 5 - 10 minutes before removing from pan
